<p>You tug at the corners of a piping-hot bag of microwave popcorn, and a plume of fragrant steam escapes. We hate to point this out, but that steam contains nearly four dozen chemicals—the sources include the buttery flavorings and the ink and glue on the bags—according to a new report from the U.S. Environmental Protection Agency. While it&#8217;s unclear how many of the chemicals may be harmful at the levels emitted, one is a known troublemaker.</p>
<p>Diacetyl, the substance used to impart a buttery taste to the movie-time snack, made headlines last summer when a Colorado man contracted &#8220;popcorn lung&#8221;—a.k.a. bronchiolitis obliterans—a severe respiratory disease linked to breathing large amounts of the stuff. (The condition has been a problem for workers in popcorn manufacturing plants.) Although dozens of foods from Twinkies to red wine contain diacetyl, it is harmless when eaten. The rub is that when heated to high temperatures, like those used to cook microwave popcorn, diacetyl vaporizes and becomes toxic.</p>
<p>As with most toxins, the devil&#8217;s in the dosage. Reportedly, the man ate an average of two bags of extra-butter-flavored microwave popcorn daily for more than ten years and (here&#8217;s the kicker) hovered over the steaming-hot pouch to fully enjoy its buttery bouquet. Cecile Rose, MD, director of the occupational medicine program at the National Jewish Medical and Research Center in Denver, Colorado, treated the man. &#8220;It is just a single case,&#8221; she says, &#8220;but I wouldn&#8217;t dismiss this concern.&#8221;</p>
<p>Manufacturers have taken that concern to heart: The country&#8217;s largest makers of microwave popcorn—ConAgra, General Mills, American Pop Corn Company, and Pop Weaver— no longer use diacetyl in their products, which include Act II, Orville Redenbacher, Pop Secret, Pop Weaver, and Jolly Time.</p>
<p>As for the remaining chemicals in microwave popcorn, you can play it safe by following a few steps outlined by David Michaels, PhD, director of the Project on Scientific Knowledge and Public Policy at the George Washington University School of Public Health and Health Services, an expert on microwave popcorn fumes: Wait until the bag is cool to the touch before opening (the vapor will condense), and open the bag under a stovetop exhaust fan.</p>
<p>The best fix, says Michaels, is to make your popcorn the old-fashioned way: on the stovetop.</p>

<p>The paper, published in the journal &#8220;Proceedings of the National Academy of Sciences,&#8221; said some of the oldest known corncobs, husks, stalks and tassels had been found in the north-coast mounds. The corn remains were found to be 6,700 to 3,000 years old, and were the earliest ever discovered in South America.</p>
<p>&#8220;Corn was first domesticated in Mexico nearly 9,000 years ago from a wild grass called teosinte,&#8221; said Piperno in a news release issued Thursday.</p>
<p>&#8220;Our results show that only a few thousand years later corn arrived in South America where its evolution into different varieties that are now common in the Andean region began. This evidence further indicates that in many areas corn arrived before pots did and that early experimentation with corn as a food was not dependent on the presence of pottery.&#8221;</p>
<p>The group&#8217;s discoveries indicated that corn was being made into flour at that time but was not yet a staple of the South American diet.</p>
<p>South America&#8217;s distance from the original source of teosinte and its dry climate, when compared to the humid jungles of Central America, likely contributed to the plant&#8217;s evolution into the corn varieties we are familiar with today, Piperno said.</p>

<p>Between the sausage pizzas, fried wings, high-cal dips, greasy chips and sugary cookies on your Super Bowl smorgasbord, it’s nice to offer a snack that won’t bust your guests’ diet plans.</p>
<p>So consider popcorn. Air-popped popcorn has 31 calories per cup, and oil-popped has 55. Plus, it’s a whole grain.</p>
<p>“Because it’s a whole grain, it adds fiber to the diet and makes you feel full fairly quickly,” said Wendy Boersema-Rappel, spokeswoman for The Popcorn Board, a Chicago-based organization funded by popcorn processors. “Not only does it do your body some good, but it tastes good.”</p>
<p>For stovetop popping, heat 1/3 cup oil in a 3- to 4-quart pan to 400 to 460 degrees (if the oil smokes, it’s too hot). Test the oil on a couple of kernels. When they pop, add popcorn to cover the bottom of the pan, one kernel deep. Cover the pan and shake to evenly spread the oil. When the popping begins to slow, remove the pan from the stovetop. The heated oil will pop the remaining kernels.</p>
<p>Pour the popcorn into a bowl, and season it with salt and butter or buttery spray. Or try something different.</p>
<p>“The simplest way is to go to your spice drawer and figure out what you love. If you love Italian flavors, pick out the Italian seasoning or the oregano and basil. You can sprinkle them directly onto the popcorn, or you can mix them with the little butter and drizzle it on. The butter will help them adhere to the popcorn,” said Boersema-Rappel.</p>
<p>Other suggestions: Sprinkle on a little salt and sugar for a sweet and salty snack. Or try popping in a garlic-infused olive oil or other flavored oil.</p>
<p>Here are a few other ideas for flavoring popcorn for Super Bowl snacking, from The Popcorn Board.</p>
<p><strong><span style="text-decoration: underline;">Blazing Buffalo Ranch Seasoning Mix for Popcorn</span></strong></p>
<p><em>1 tablespoon ranch dressing or dip mix (from a 1-ounce package)</em></p>
<p><em>1 tablespoon seafood spice mix (or celery salt)</em></p>
<p><em>1 teaspoon garlic powder</em></p>
<p><em>1 teaspoon powdered sugar (or sugar)</em></p>
<p><em>1/8 teaspoon cayenne pepper</em></p>
<p><em>1/4 teaspoon vegetable oil</em></p>
<p><em>6 quarts popped popcorn</em></p>
<p><em>Cooking spray (optional)</em></p>
<p>In a small bowl, blend ranch dressing mix, spice mix, garlic powder, powdered sugar and cayenne pepper. Sprinkle with vegetable oil and blend until well incorporated.</p>
<p>Place popcorn in a serving bowl, and spray lightly with cooking spray. Sprinkle seasoning mix over popcorn to taste, and toss. Store leftover seasoning mix in an airtight container for future use.</p>

And you&#8217;ve experienced it at home&#8230; especially if your significant other buys the healthy stuff. So what to do? <p>Buttering popcorn is impossible. It always turns out inconsistent. A few pieces will be soaked with butter, and others have no butter on them at all.</p>
<p>But I want butter on my popcorn. What should I do?</p>

<h4>Answer: Butter-Pop in a Pan</h4>
<p>Make your popcorn in a pot instead of using a microwave. (It&#8217;s easy, and cheap). And instead of using oil as most recipes require, go with melted butter. Voila: butter-hinted popcorn!</p>

<h4>Answer: Render First, then Pan Pop</h4>
<p>Use real butter and render it before you add it to unpopped kernels.</p>
<p>Rendering:</p>
<ol>
<li>Allow butter to simmer in a stovetop pan.</li>
<li>Remove from heat and scrape the foam (milk solids) off with a spoon.</li>
<li>Put the butter back on the heat, but be careful not to burn it. (You might want to keep the heat on medium and periodically remove the pan.)</li>
<li>Remove the rest of the foam (try to get rid of almost all of it).</li>
</ol>
<p><strong>Your butter is now rendered!</strong></p>
<p>Now pour in your kernels, cover and let simmer on low heat.</p>
<p>When the corn starts popping, release steam by lifting lid away from your face.</p>
<p>You&#8217;ll have perfect popcorn in less than 10 minutes.</p>

<h4>Alternative Answer: Add Powdered Butter</h4>

<p>Officially, you&#8217;re supposed to add water to powdered butter. But I won&#8217;t tell anyone if you keep it dry and shake.</p>

<h4>Alternative Answer: DIY Butter Powder</h4>
<p>Add melted butter to tapioca maltodextrin (try N-Zorbit) until it is fully absorbed — the substance will solidify at a ratio of about 3:2 butter to tapioca maltodextrin.</p>
<p>Then, rub your solid butter brick through a fine sieve or tamis and disperse over a bowl of pre-popped popcorn.</p>
<p>Once the powdered butter hits your mouth, it will turn to liquid once again. (Melts in your mouth, not on your kernels.)</p>

<h4>Alternative Answer: The Bag Shake</h4>
<ol>
<li>Melt 1-2 tablespoons of butter (more if you&#8217;re a butter-head).</li>
<li>Fill a clean paper lunch bag half-way with your popped popcorn.</li>
<li>Drizzle your melted butter along the sides of the half-filled bag, fold over the top, and shake vigorously for at least 30 seconds.</li>
<li>Repeat as necessary until all your popcorn is well-buttered (and unsoggy).</li>

<p>It takes time, but I fill a melon baller with melted butter then drizzle and swirl it through the tiny hole over a large bowl of popped corn. Toss the bowl contents between mellon ball butter shot swirls for best results.</p>
